Three Cheese Chicken Parmigiana Recipe

Chicken Parmigiana is a very popular restaurant and pub meal but can be made simply at home.

This particular chicken parmigiana recipe uses three types of cheese, parmesan, low fat mozzarella and low fat tasty cheese, so it's very, very tasty. This recipe features in one of our weight loss diets for everyday people.

Healthy Dinner Recipe :  Three Cheese Chicken Parmigiana Recipe

Recipe Serves:

This Recipe Serves 2.

Recipe Ingredients:

  • 1 medium chicken breast fillet (200g)                      
  • 1 egg                                                                          
  • ¼  cup low fat milk (60ml)                                                     
  • 1/3 cup wholemeal flour (40g)                                              
  • 1/2 cup dried multigrain bread crumbs (75g)                      
  • 1.5 tablespoon olive oil                                              
  • 1 cup Italian pureed tomato pasta sauce (200g)      
  • 2 Tbs chopped fresh basil                                          
  • 1 Tbs fresh or frozen parmesan cheese                    
  • ¼ cup reduced fat mozzarella cheese, grated (20g)
  • ¼ cup reduced fat tasty cheese, grated (20g)

Recipe Method:

  1. Preheat oven to 180 degrees.
  2. Cut the breast fillet length wise, to create two fillets. Using a meat mallet, flatten chicken fillets.
  3. Beat eggs and milk in a small bowl.
  4. Collect 2 bowls, place flour in one and bread crumbs in the other.
  5. Heat large frying pan with oil.
  6. Dip chicken in flour mixture, followed by egg mixture and end by dipping in breadcrumbs to coat.
  7. Place chicken in fry pan and cook for 4 minutes on each side, till golden brown.
  8. While cooking mix the cheese together in a bowl.
  9. Collect a baking dish, place cooked schnitzels on tray, and coat the schnitzels with the pasta sauce, followed by fresh basil leaves and finish with the 3 cheese mix.
  10. Place in oven for 15 minutes, till cheese is melted and golden.
