Warm Vegetable Salad Recipe

It's often very hard to maintain our weight in the cooler months of the year, let alone loss weight.

This Warm Vegetable Salad may help satisfy your cravings for warm comfort food while helping you eat well.

This is a very tasty salad, using marinated and fresh vegetables. It could be served with cos lettuce as the base or even iceberg lettuce.

This recipe is low in saturated fats and sodium.

Healthy Dinner Recipe:  Warm Vegetable Salad Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 5 g olive oil (teaspoon)
  • 100g sundried tomatoes
  • 120 g roasted capsicum, finely slices
  • 100g button mushrooms
  • 110g zucchini (one small zucchini)
  • 150g salad mix
  • 50g balsamic vinegar
  • 10g olive oil  (2 teaspoon)
  • Black pepper

Recipe Method:

  1. Place 5g olive oil in pan. Slice zucchini into wedges and place in pan with button mushrooms.
  2. Cook for 2-3 minutes or until zucchini is browned.
  3. Add tomatoes & roasted capsicum & cook for further 1-2 minutes or until warmed through.
  4. Place salad mix in large bowl and add vegetables and mix well to combine.
  5. Mix balsamic vinegar and olive oil together and drizzle dressing over and toss through.
  6. Place on plates and serve immediately.

Additional Comments:

Add crumbled feta for an even more sumptuous lunch. Substitute sundried tomatoes with grilled roma tomatoes if you prefer. Sprinkle dried oregano when missing dressing. Turn this recipe into a more filing dinner by adding grilled chicken and placing on top of salad.
