Bruschetta with Eggplant and Tomato Recipe

This Bruschetta with eggplant and tomato recipe is as tasty as it is healthy.

Bruschetta is often served in Italian restaurants as an entree and makes a wonderful entertaining dish regardless of the origins of the other foods you plan to serve.

Healthy Entertaining Recipe :  Bruschetta with Eggplant and Tomato

Recipe Serves:

This Recipe Serves 6.

Recipe Ingredients:

  • 6 slices bread (French stick, sliced on angle)
  • 6 Basil leaves
  • 6-8 black pitted olives
  • 1.5 tablespoons basil pesto (we used Barilla)
  • 150g tomato, finely chopped (2 small or 1 large)
  • 150g roasted eggplant, finely chopped (can use from jar for convenience)
  • Drizzle Balsamic vinegar to serve
  • Salt and pepper to taste

Recipe Method:

  1.  Preheat oven to 180 degrees.
  2. Spread the basil pesto thinly over each slice of bread.  Don’t put too much on as it can be too overpowering in flavour.
  3. Place in oven and cook 3-4 minutes or until just golden brown.
  4. Remove from oven tray and place tomatoes, eggplant and olives on top of bread.
  5. Drizzle with balsamic vinegar and season with salt and cracked pepper.
  6. Serve immediately.
