Pumpkin Dip Recipe

It's often hard to find tasty food to serve and eat when on a weight loss diet.

Pumpkins are a tasty source of vitamins and minerals, such as Beta-carotene, vitamin C and potassium. Pumpkins are very heart healthy.

This recipe is low in fat and sodium.

Healthy Entertaining Recipe :  Pumpkin Dip

Recipe Serves:

This Recipe Serves 8.

Recipe Ingredients:

  • 500g pumpkin cut into cubes
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 pinch of each – paprika, cumin, coriander to taste
  • 2 tablespoons lemon juice
  • 120g natural yoghurt
  • Salt and pepper to taste

Recipe Method:

  1. Preheat oven 200C.
  2. Place cubed pumpkin on tray and drizzle with olive oil and mix around until all the pumpkin is coated with the oil.  Place the cloves of garlic on tray also.  Roast until softened, usually 15-20 mins, turning occasionally.  When cooked take out and set aside to cool.
  3. Once cooled place in food processer or blender the all the above ingredients and mix until good consistency.  Add more yoghurt if too thick.
  4. Serve with toasted Turkish bread.
