Corn Fritters with Tomato Relish Recipe

Cooked corn is said to have significant levels of antioxidants which are very good for us.

Corn fritters are an old favorite and this corn fritter recipe is quick and easy to prepare. They are delicious served with tomato relish.

This recipe is low in saturated fats.

Corn Fritters with Tomato Relish Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 30g self raising flour (approx ¼ Cup)
  • 125g corn kernels
  • 1 x 59g egg 
  • 40g tomato, finely chopped
  • 10g coriander, finely chopped
  • 5g minced garlic
  • 30g tomato relish, to serve
  • 10g olive oil

Recipe Method:

  1. Place self raising flour and egg in bowl, mix until well combined.
  2. Drain corn kernels and add tomato, coriander and garlic and mix until well combined.
  3. Preheat small non stick frying pan and add olive oil.
  4. Spoon tablespoons of mixture into pan and cook until bubbles rise to the surface.
  5. Flip over and cook other side until golden brown.
  6. Serve immediately drizzled with tomato relish.

Additional Comments:

Flat leaf parsley can be substituted for coriander in the recipe if desired.
