Gourmet Potato Salad Recipe

Healthy Lunch Recipe : Gourmet Potato Salad

This Recipe Serves 4.

Recipe Ingredients:

  • 1kg washed Pontiac potatoes, quartered
  • ¼ cup wholegrain mustard
  • 1/3 cup reduced fat mayonnaise
  • ½ cup finely chopped sun dried tomatoes
  • 1 small green capsicum, finely chopped
  • 1 cup corn kernels

Recipe Method:

  1. Cook potatoes in large saucepan of water until tender (approx 12-15 minutes).
  2. Drain potatoes and cool.
  3. Mix together whole grain mustard and mayonnaise and add to potatoes, add sun dried tomatoes, corn kernels and capsicum and mix through potatoes until combined.
