Lettuce Cups with Nicoise Style Salad Recipe

This salad is very quick and easy to prepare and uses ingredients many of us have lying around in our refridgerator.

As well as being quick and tasty, this salad is packed full of healthy natural ingredients, but if you like tuna, feel free to add it to this recipe for added protein and a host of other nutrients to make this a super healthy lunch or side salad.

Combine with an Apple, Carrot and Celery Juice to make this nutrition packed lunch complete.

Healthy Lunch Recipe : Lettuce Cups with Nicoise Style Salad

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 4 hardboiled eggs, peeled
  • 2 cups beans, sliced into halves
  • 2 small cucumber, seeds removed and sliced into strips
  • 2 large tomatoes cut into wedges
  • 2 spring onions, finely sliced
  • 4 iceberg lettuce cups
  • Cracked black pepper
  • Balsamic vinegar

Recipe Method:

  1. Cut hardboiled eggs into quarters.
  2. Bring small pot of water to the boil, add beans and blanch for about 30 seconds, then take out and refresh with cold water.
  3. Place iceberg lettuce cups on plate, arrange eggs, beans, cucumber, tomato and spring onion on top, garnish with cracked black pepper and drizzle with balsamic vinegar.
  4. Serve immediately.
