Potato Roasted Tomato & Avocado Salad Recipe

This potato salad with roasted tomatoes and avocado makes a wonderful lunch or healthy side salad.

As well as adding flavour, roasted tomatoes are full of antioxidants, vitamins and fibre while the avocados provide healthy fats.

This recipe includes 'light' or low fat sour cream which tastes as good as regular sour cream but has less fat and calories.

Healthy Lunch Recipe : Potato Roasted Tomato & Avocado Salad

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 1 tablespoon olive oil
  • 16 Chat potatoes
  • 2 tablespoons light sour cream
  • 200g Cherry Tomatoes
  • 2 tablespoon seeded mustard
  • 1 small red capsicum, chopped
  • 1 chopped avocado (skin and seed removed)
  • 1 tablespoon olive oil

Recipe Method:

  1. Preheat oven to 180 degrees or 160 degrees (fan forced).
  2. Place cherry tomatoes on tray and drizzle with olive oil. Cook for 10-12 minutes or until lightly browned.
  3. Cook chat potatoes until tender and slice in half.
  4. Mix together sour cream and seeded mustard until well combined.
  5. Place chat potatoes in a bowl and arrange tomatoes, capsicum and avocado on top.
  6. Drizzle salad with dressing and serve straight away.
