This potato salad with roasted tomatoes and avocado makes a wonderful lunch
or healthy side salad.
As well as adding flavour, roasted tomatoes are full of
antioxidants, vitamins and fibre while the avocados provide healthy fats.
This recipe includes 'light' or low fat sour cream which tastes as good as regular
sour cream but has less fat and calories.
