Prawn Skewers with Cucumber Salsa Recipe

Prawns are an extremely good source of protein, yet are very low in fat and calories, making them a very healthy food choice.

This prawn skewers recipe includes sweet chilli sauce and coriander giving it a distinctive Asian flavour are great for a finger food idea, or for a light lunch. If you're not a fan of coriander, you can simply omit it from the recipe, which will still taste wonderful.

Prawn Skewers with Cucumber Salsa Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 200g raw prawns
  • 10g garlic, finely chopped
  • 10g coriander, finely chopped
  • 20g sweet chilli sauce
  • 10g olive oil
  • 40g Lebanese cucumber
  • 30 g tomato
  • 20g red onion, chopped

Recipe Method:

  1. Mix garlic, coriander and sweet chilli sauce in  bowl.
  2. Thread prawns on skewers, brush with marinade. Place in fridge.  
  3. In small bowl mix together cucumber, tomato and red onion , mix until combined.
  4. Preheat pan over medium heat, add oil, cook prawns 1-2 minutes each side or until cooked through.
  5. Serve immediately on top of salsa.
