Risoni Pasta Salad Recipe

Pasta salad can make a wonderful lunch.

More substantial than a garden salad, yet still cool and light, pasta salad has the best of both worlds.

This versatile pasta salad can be served as a side dish or as a stand alone meal for lunch.

Risoni pasta is shaped like rice and can be purchased at most good supermarkets.

Healthy Lunch Recipe : Risoni Pasta Salad

Recipe Serves:

This Recipe Serves 2.

Recipe Ingredients:

  • 1½ cups risoni pasta
  • 1 tomato, chopped
  • 1 small Lebanese cucumber, chopped
  • 1 small carrot, grated
  • ½ cup finely sliced ham
  • 1 tablespoon orange juice
  • 2 tablespoons sweet chili sauce

Recipe Method:

  1. Bring medium saucepan of water to the boil.
  2. Add the risoni and cook until al dente.
  3. Drain and let cool.
  4. Lightly stir through tomato, cucumber, carrot and ham. Mix orange juice and sweet chilli sauce together and combine with pasta.
