Roquette Risotto on Field Mushroom Recipe

Mushrooms are low in calories, fat and sodium, and high in fibre, making them a perfect weight loss diet food.

The rocquette in this risotto gives it extra flavor. Be sure to add it at the last minute, so that it still has a little crunch. This recipe is perfect for lunch or dinner.

Healthy Lunch Recipe: Roquette Risotto on Field Mushroom  Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 10g Olive Oil
  • 250g Arborio rice
  • 2 Cloves Garlic
  • 50g roquette lettuce
  • 100g onion, finely diced
  • 50g capsicum, finely sliced
  • 320g field mushrooms (approx 4)
  • 20g Parmesan Cheese
  • 1 litre chicken stock

Recipe Method:

  1. Place Arborio rice in heavy based pan.
  2. Add one cup stock to rice at a time, making sure the liquid is well absorbed by the rice, stirring constantly. Keep stirring and adding more liquid until the rice is cooked through. If needed add more water to ensure the rice is cooked.
  3. Heat oil and cook onion, garlic and capsicum over medium heat for 2-3 minutes or until softened.
  4. Stir through cooked risotto and mix until combined, adding grated parmesan cheese. Add roquette and mix well. Set aside. Preheat medium pan over medium heat and cook mushrooms on both sides until golden brown (option to drizzle little olive oil prior to cooking).
  5. Place risotto on top of each mushroom and serve immediately.
