Salad Filled Tacos Recipe

This is a quick and tasty lunch idea that kids and adults alike seem to enjoy.

The filling used in this recipe can also be used in pita bread as a wrap, or even in mountain bread. Taco shells do give it a wonderful crunch though that you won't get using soft casings.

This recipe is low in saturated fat.

Salad Filled Tacos Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 4 taco shells
  • 1 large tomato, finely chopped
  • 1 cup shredded lettuce (iceberg)
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, finely chopped
  • 100g reduced fat mayonnaise

Recipe Method:

  1. Preheat oven to 180 degrees (160 degrees fan forced).
  2. Heat shells in oven for 5 minutes or until slightly golden.
  3. While shells are heating combine and mix shredded cabbages, carrot and mayonnaise.
  4. Take tacos out of oven and let cool about 2-3 minutes.
  5. Place on serving plate and put lettuce on bottom topping with coleslaw and tomato pieces.
  6. Serve immediately.
