Mini Beef Burger Recipe

Hamburgers are typically thought of as diet food, but homemade burgers can make a healthy lunch or dinner choice if you use fresh, low-fat ingredients including lean minced beef.

Not only is this recipe colourful, but it tastes great too!

Pop the burgers and salsa  in your favourite focaccia, baguette or bagel and you have a great tasting meal.

Healthy Lunch Recipe : Mini Beef Burger

Recipe Ingredients:

    Mini beef Burgers

  • 400g lean beef mince
  • 2 tablespoons sweet chilli sauce
  • 1 teaspoon crushed garlic
  • 4 long bread rolls, cut lengthways
  • 8 lettuce leaves, halved

  • Salsa

  • 1/2 yellow capsicum, finely diced
  • 1/2 red capsicum, finely diced
  • 3 firm roma tomatoes, seeds removed and finely diced
  • 1 small cucumber, seeds removed and finely diced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon soft brown sugar
  • Cracked black pepper to taste

Recipe Method:

  1. Place the capsicums, tomatoes and cucumber into bowl. Mix lightly until combined. Mix the olive oil and white wine vinegar together; add the brown sugar, mix to combine and season with salt and pepper to taste. Pour the dressing over the salsa mixture. Set aside
  2. To make the mini beef burgers, place the beef mince into a large bowl. Add the garlic and sweet chilli sauce, add salt and pepper to taste. Using 2 tablespoons of mixture, shape into balls.
  3. Cook on a preheated hot char grill or in a frying pan for 5 minutes each side. To serve, top each roll with 2 pieces of lettuce, burgers and spread salsa over top.

Additional Comments:

This salsa would also be a great addition to grilled fish or chicken.
