Three Bean Nachos Recipe

The true secret to successful weight loss is finding healthy foods you enjoy eating, and who doesn't enjoy eating Nachos?

This is a nice twist on the traditional Nachos. Serving with guacamole (avocados are very healthy) adds the finishing touch. If you don't have the time to make the guacamole, serve the Nachos with a low fat guacamole dip.

This recipe is a good source of protein.

Healthy Lunch Recipe : Three Bean Nachos

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 400g plain corn chips
  • 1 x 425g can three bean mix, drained
  • 1 small green capsicum, diced
  • 1 cup tomato salsa
  • 1 cup low fat grated cheese
  • Guacamole – to serve
  • 1 ripe avocado, peeled and stone removed
  • 2 tablespoons lemon juice
  • Pinch of chilli flakes

Recipe Method:

  1. Spread ½ corn chips over microwave proof plate. Sprinkle half beans, green capsicum, salsa and cheese, and then finish off with the corn chips and the rest of the beans, capsicum, salsa and cheese.
  2. Place in microwave and cook on medium heat for 1 minute, or until cheese has melted.
  3. Alternatively cook in oven 180 degrees for 7-8 minutes, or until cheese has melted.
  4. To make the guacamole - Mash the avocado with a fork and combine well with lemon juice and chili and serve with the nachos.
