Tuna and Tomato Cakes Recipe

Water-packed Tuna is a very heathy, low-fat lunch choice that is far more versatile than most people realise.

These Tuna fish cakes can be served in a crusty bread roll or on their own with the salsa. They're also lovely served with tomato chutney.

Refrigerate well and enjoy them for lunch a couple of days in a row.


This recipe is low in saturated fats and a good source of protein.

Healthy Lunch Recipe : Tuna and Tomato Cakes

Recipe Serves:

This Recipe makes 12 Tuna Cakes.

Recipe Ingredients:

  • 1 can Tuna in spring water (425g), drained
  • 1 tomato, finely chopped
  • 1 egg, beaten
  • 1/2 cup mixed vegetables (i.e. peas, corn, and carrot)
  • 3/4 cup bread crumbs
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup tomato salsa to serve

Recipe Method:

  1. Place tuna, tomato, egg and vegetables in bowl.
  2. Mix together until well combined.
  3. Place breadcrumbs on plate and season with salt and pepper.
  4. Using heaped tablespoons of mixture, form into cakes.
  5. Coat cakes in breadcrumbs.
  6. Heat pan over medium heat and add oil.
  7. Cook cakes for about 2 minutes each side or until golden brown.
  8. Serve immediately with tomato salsa of your choice.
