Date and strawberry cupcakes Recipe

These cupcakes are very quick and easy to make, and taste delicious.

If you're on a diet, be careful, because they taste so good you may not be able to stop at just one.

Other berries such as raspberries or blueberries can be substituted for strawberries if desired.

Date and strawberry cupcakes Recipe

Recipe Serves:

This Recipe makes 8 Cupcakes.

Recipe Ingredients:

  • 175g (approx 11/2 cup self raising flour)
  • 1 egg (approx 59g)
  • 25g vegetable oil
  • 125g reduced fat milk
  • 75 g strawberries, sliced
  • 100g pitted dates, sliced
  • 125g reduced fat milk
  • Pinch of cinnamon

Recipe Method:

  1. Preheat oven to 160 degrees fan forced (180 degrees normal oven).
  2. Sift self raising flour into large bowl.
  3. Mix oil, egg and milk together to combine.
  4. Add milk mixture to flour and mix slowly until just combined.
  5. Add dates and strawberries (reserve a few for the top of the muffin) and mix again to combine.
  6. Place mixture into greased muffin pan and cook for 12-15 minutes or until risen and golden.
  7. Serve sprinkled with cinnamon.

These cupcakes make a perfect morning tea, fingerfood and are a perfect treat to place in school lunchboxes.
