This recipe is low in fat and saturated fats.

Recipe Serves:

This Recipe Serves 10.

Recipe Ingredients:

  • 250g Blueberries (we used frozen)
  • 230g Plain Flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 160g Castor Sugar
  • 2 eggs
  • ¾ cup Low Fat Milk
  • 100g Light Spread melted in microwave 20-25  sec
  • 1 teaspoon vanilla Essence

Recipe Method:

  1. Preheat oven to 190C and layout 10 muffin patties inside a muffin tin.
  2. In a bowl sift the flour, baking powder, salt, sugar.  Make a well in the centre.
  3. Now with a mixer, mix in the eggs, milk, melted spread, essence.  Once all combined mix in ¼ of the blueberries, so they slightly break up and the mixture changes slightly in colour then with a wooden spoon mix in the rest (be careful not to break up these).  Make sure you do not over mix this mixture.
  4. Place mixture into patty pans until full to make 10 muffins.
  5. Bake in oven for 25-30 mins, checking with a skewer.

Additional Comments:

As an option you can replace the blueberries with raspberries or your favourite mixed berries.
