Risoni Soup with Cheese Toast Recipe

This soup is quick and easy to make and is ideal as a light dinner or snack.

We've used low fat cheese on the cheese toast, but if you're watching your calories and carb intake very closely, you may choose not to serve with the cheese toast.

Risoni Soup with Cheese Toast   Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

    Risoni
  • 200g risoni
  • 5 cups chicken stock
  • 80g celery, sliced
  • 50 g red capsicum, sliced
  • 100g broccoli forets

  • Cheese toast
  • 160g (4 slices) multigrain bread
  • 50g low fat cheese

Recipe Method:

  1. Place chicken stock in medium sauce pan, ad risoni, stir until well combined.
  2. Cook over medium heat for about 3-4 minutes, or until risoni has just started to soften.
  3. add vegetables and cook for another 3-4 minutes, once vegetables have softened.
  4. Place cheese on bread and place under preheated grill for 1-2 minutes or until melted.
  5. Serve with soup.

Additional Comments:

If you don’t have risoni available, a small macaroni will work just as well.
