Here rae some recipes i found for low fat quiche, don't know how they taste haven't tries them myself:
BASE:1 1/2 c. brown rice, cooked
1 egg white
FILLING:4 egg whites (or use egg sub.)
1 c. evaporated skim milk
2 slices bacon, crumbled
4 oz. low-fat Swiss cheese, grated
1 sm. onion, chopped & sauteed in chicken broth
5 mushrooms, sliced
1/4 bunch broccoli, chopped
1/4 tsp. salt, optional
Dash of nutmeg
Press cooked brown rice into pan and coat with egg white. Use leftover egg white for filling. Bake crust at 400 degrees for 7 minutes. Beat egg whites and evaporated milk. Mix in remaining ingredients and pour into cooled crust. Bake at 425 degrees for 40 minutes. Let stand 10 minutes before serving. Serves 6.

BACON QUICHE SANS CRUST 6 eggs
1 c. low fat milk (2% milk fat)
6 oz. Swiss or Gruyere cheese, shredded
8 slices crisp bacon, crumbled
1/8 tsp. ground nutmeg
Dash each salt & white pepper
Preheat oven to 375 degrees. Spray 9" or 10" quiche dish or pie pan with non stick cooking spray; set aside.
In medium mixing bowl, using a fork beat together eggs and milk until blended; stir in remaining ingredients. Pour mixture into prepared dish (or pan) and bake in middle of center oven rack for 40 to 45 minutes (until a knife inserted in center comes out clean). Remove from oven and let stand for 5 minutes before cutting. Makes 4 servings.
