We have used eye fillet as it is so tender and easy to cook however please use your favourite cut of steak.
This recipe is low sugar, low carb, low saturated fat and high protein.
Ingredients
- 250g Beef Fillet, no fat
- 1 slice multigrain bread, toasted
- 2 large handfuls of baby spinach
- 6 cherry tomatoes, halved
- 1/4 capsicum, chopped
- 1 clove garlic, crushed
- A couple of rings of thinly sliced red onion
- 1 tbsp. crumbled feta
- Sprinkle of oregano or fresh basil leaves
- 1 tbsp. olives, sliced
- Dressing:
- 1 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- 1 clove garlic, crushed
- Cooking spray
- Salt & pepper to taste
Method
- Heat your BBQ or griddle pan until hot.Â
- Spray your beef fillet with a little cooking spray, season with salt and pepper on both sides.
- Cook beef to your liking, when done take off heat, place on a plate, cover with foil for 5-10 minutes.
- Set up all your salad ingredients into a bowl. Toast your slice of bread, cut off crusts then slice into crouton size pieces.
- Place your balsamic vinegar, olive oil and garlic into a small dish and mix. Drizzle over salad.
- Place your steak onto a board and with a very sharp knife and slice. Place on top of salad and serve immediately.
