Low in fat and very tasty, this potato gratin makes a perfect accompaniment to fish, beef, chicken, pork or whatever.
Ingredients
- 2 large potatoes, sliced thinly
- 1 clove garlic, crushed
- 1/2 cup vegetable stock, salt reduced
- 1/2 cup evaporative milk
- 1/4 small onion, sliced thinly
- 1/4 cup tasty cheese, reduced fat
- Sprinkle of thyme
- S & P to taste
Method
- Preheat oven to 180C.
- In a small oven proof dish for 2 people, layer bottom with sliced potatoes.
- Spread garlic and half onion over 1st layer of potatoes, season with salt and pepper.
- Layer remaining potato,then remaining onion, season.
- In a bowl combine stock and milk and pour over dish.
- Spread cheese on top with a sprinkle of thyme.
- Bake for 30 mins until golden brown and tender.
