Sultana and Oat Loaf

This sultana and oat loaf is delicious with a cup of herbal tea or as a substitute for breakfast as something a bit different.

This is not a cake, it is a loaf or bread and great for a mid arvo tea. It is dense, and has a real healthy taste as it is full of oats and bran.

Ingredients

  • 2 cups self raising flour
  • 2 eggs
  • 1/2 cup low fat milk
  • 30g butter
  • ⅓ cup sultanas or raisons
  • ⅓ cup rolled oats
  • ⅓ cup All Bran or similar sticks
  • 1/4 cup natural or greek yoghurt
  • 2 tbsp. crushed walnuts

Method

  1. Pre heat oven to 180C.
  2. Sift flour in bowl. Melt butter and mix in eggs and milk and mix well to combine.
  3. Add milk mixture to flour, yoghurt and mix well to combine.
  4. Add sultanas, rolled oats, all bran and walnuts and mix in well. This will be a very dense batter.
  5. Sprinkle a little more sultanas on the top of the bread prior to baking if you like.
  6. Place in lightly greased and lined loaf tin and cook for 25-30 minutes or until risen.
  7. Slice and serve immediately.
