This is not a cake, it is a loaf or bread and great for a mid arvo tea. It is dense, and has a real healthy taste as it is full of oats and bran.
Ingredients
- 2 cups self raising flour
- 2 eggs
- 1/2 cup low fat milk
- 30g butter
- ⅓ cup sultanas or raisons
- ⅓ cup rolled oats
- ⅓ cup All Bran or similar sticks
- 1/4 cup natural or greek yoghurt
- 2 tbsp. crushed walnuts
Method
- Pre heat oven to 180C.
- Sift flour in bowl. Melt butter and mix in eggs and milk and mix well to combine.
- Add milk mixture to flour, yoghurt and mix well to combine.
- Add sultanas, rolled oats, all bran and walnuts and mix in well. This will be a very dense batter.
- Sprinkle a little more sultanas on the top of the bread prior to baking if you like.
- Place in lightly greased and lined loaf tin and cook for 25-30 minutes or until risen.
- Slice and serve immediately.
