This is a great summer salad to have at a BBQ or on a hot night. The lightness of the melon & cucumber mixed with the sharpness of feta is a wonderful combination.

Ingredients

  • 400g watermelon, cubed
  • 1 cucumber, diced
  • 2 spring onions, sliced
  • 10-15 mint leaves, chopped
  • 30g feta, crumbled
  • Salt & pepper to taste

Method

  1. Place all your ingredients into a bowl, season with salt and pepper.
  2. Mix around so all ingredients coated with mint leaves.
  3. Serve in a large bowl.
