This chickpea and bean salad recipe makes a perfect accompaniment at BBQ's and picnics.

Recipe Ingredients:

Ingredients:

  • 400g (1 Can) Chickpeas – Rinsed and Drained
  • 400g (1 Can) Red Kidney Beans – Rinsed and Drained
  • 400g (1 Can) Corn – Rinsed and Drained
  • 100g Capsicum diced
  • 100g Cherry Tomato Halved

Dressing:

  • 4 tbls Olive Oil
  • 2 tbls Red or White Wine Vinegar
  • 2 tbls Dijon Mustard
  • 1 tbls sugar
  • 1 tbls Dried Onion Flakes

Recipe Method:

  1. Place all ingredients into a bowl ensuring rinsed and drained.
  2. Whisk all dressing ingredients and pour over, add a little pepper if desired.
