Vegetarian Fried Rice Recipe

Fried rice is a very economical and easy meal to prepare.

If you are a meat lover and not watching your diet, feel free to add some chopped bacon or ham to this dish.

Kecap Manis also goes well with fried rice; and is available at most supermarkets and Asian Food stores.

This is a Low Fat recipe.

Healthy Dinner Recipe : Vegetarian Fried Rice

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 sticks celery, finely chopped
  • 1 red capsicum, finely diced
  • 1 carrot, peeled and grated
  • 1 can 440g corn kernels, drained
  • 1 small can water chestnuts, drained
  • 4 cups cooked long grain wholemeal rice
  • 2 tablespoons Kecap Manis

Recipe Method:

  1. Heat large wok over medium heat. Add oil and onion and sauté for one minute.
  2. Add celery, red capsicum and stir fry for 2 minutes.
  3. Add carrot, corn kernels and water chestnuts and stir to combine.
  4. Add the rice and Kecap manis and mix through to combine. Heat through for about 1-2 minutes.
  5. Serve immediately.
