Chicken Quesadillas Recipe

If you love Mexican food, you'll love this Chicken Quesadillas Recipe.

These Chicken Quesadillas are packed with flavour but have relatively few ingredients and are quick and easy to make.

Despite having 1 cup of light tasty cheese they only have 3.8g of fat per 100g.

This recipe is low in saturated fats and a good source of protein.

Healthy Lunch Recipe: Chicken Quesadillas Recipe

Recipe Serves:

This Recipe Serves 4.

Recipe Ingredients:

  • 8 Tortillas
  • 400g Shredded BBQ Chicken Breast
  • 1 Cup Light Tasty Cheese
  • 1 Onion Sliced
  • 1 Red Capsicum Sliced
  • 1 Tomato diced
  • ½ Cup Corn Kernels
  • 50g Sweet Chilli Sauce

Recipe Method:

  1. Place 4 tortillas flat on bench.  Preheat oven to low heat (150C)
  2. In a pan sauté the onion and red capsicum until softened and set aside.
  3. Arrange the following ingredients on half of each tortilla.  Sprinkle some cheese lightly, then place chicken, onion cap mix corn and diced tomato then remainder of the cheese mix.
  4. Drizzle a little of the sweet chilli sauce.
  5. Fold the tortilla over the filling so you have a semi circle shape.
  6. Heat a large frypan over medium heat
  7. Place 2 of the tortillas in the frypan and cook for around 2 min on each side until cheese has melted.
  8. To keep the quesadillas warm transfer onto tray with baking sheet and place into oven.
  9. Once you have cooked all the tortillas cut them into half and serve with a dollop of guacamole on each wedge.

Additional Comments:

Instead of a frying pan you can place in a sandwich press. For a cheesier bite add some mozzarella.
For an even faster meal, substitute the onion and red capsicum with sliced spring onions and roasted capsicum strips from a jar and just add straight onto tortilla.
