Apple and Brown Sugar Pikelets Recipe

As well as being a tasty snack, these pikelets can also be served for breakfast.

If you want to mix up the flavours or be adventurous from time to time, you can use other stewed fruits in place of apples. Tasty and healhty examples inlcude stewed apricots or plums.

Apple and Brown Sugar Pikelets Recipe

Recipe Serves:

This Recipe makes approximately 8 pikelets.

Recipe Ingredients:

  • 3 Granny smith apples, peeled, cored and chopped  
  • 1 teaspoon brown sugar
  • 11/4 cups self raising flour
  • 1 small egg, beaten
  • ¼ cup low fat milk
  • 1 teaspoon low fat margarine
  • 1 teaspoon cinnamon
  • 1 tablespoon honey

Recipe Method:

  1. Place apples in small sauce pan, pour 2 tablespoons water over the top. Cover and simmer for about 7-10 minutes or until softened.
  2. Sprinkle  over brown sugar and set aside.
  3. Place flour in bowl and add beaten egg and milk and stir well to combine. Add ½ cup apples to the mix and stir well to combine.
  4. Heat medium non stick pan over medium heat and grease with margarine. Place heaped tablespoon of mixture into pan and cook on one side until bubbles rise to the top, then flip and cook until golden brown.
  5. Serve immediately topped with extra apples and honey drizzled over the top.
