Salmon Kebabs Recipe

This Salmon Kebab recipe is a delicious, quick and easy lunch which is perfect as part of a weight loss diet.

Salmon is regarded as a superfood because it is so high in Omega 3 fatty acids and other nutrients essential to good health and wellbeing.

This is one of our favourite healthy lunch recipes and if you try it, we're sure it will become one of yours too.

This recipe is low fat and a good source of protein.

Healthy Lunch Recipe: Salmon Kebabs Recipe

Recipe Serves:

This Recipe Serves 2.

Recipe Ingredients:

  • 4 bamboo skewers, soaked for at least ½ hour
  • 400g Salmon, skin removed and bones removed cut into 2cm squares
  • 10g olive oil
  • 100g button mushrooms
  • 200g capsicum cut into squares
  • 100g zucchini sliced 1 cm
  • 100g onion sliced 1cm
  • 8 cherry tomatoes
  • 300g Cooked Steamed Rice


Dressing

  • 150g low fat natural yoghurt
  • ½ lime juice

Recipe Method:

  1. Thread skewers, alternating mushrooms, tomato, salmon, onion, capsicum and zucchini aiming for at least 2 of each veg on kebab and 3 of the salmon.
  2. Combine yoghurt and lime juice, tasting as you go, should not be overpowering. Refrigerate until kebabs are ready.
  3. Spray with olive oil and heat char grill plate or pan.  Brush kebabs with olive oil and season with salt and pepper.
  4. Cook the kebabs for around 4-5 mins ensuring you turn consistently to avoid burning.  Salmon should not be cooked all the way through, as you still want it to be soft and moist.
  5. Serve on bed of rice and drizzle with lime yoghurt dressing.

Additional Comments:

Although we've listed this as a healthy lunch recipe, it serves equally well as a healthy dinner recipe. As an alternative, serve with your favourite garden salad instead of the bed of rice.
