Thai Chicken Meatballs
If you don�t like heat, omit the chilli or reduce down a little. We have used Thai red curry paste however you can also use Penang or Green Curry paste if you prefer.

Ingredients
- 500g chicken mince
- 2 spring onions, sliced finely
- ½ tbsp. red chilli paste (optional)
- 1 tbsp. Thai red curry paste
- 2 tbsp. sweet chilli sauce
- 1 tbsp. fish sauce
- 2 tbsp. soy sauce, salt reduced
- 2 clove garlic, crushed
- 2 tsp. ginger, crushed
- 2 slice multigrain bread, processed to make breadcrumbs
- 3 tbsp. flour, plain
Method
- 1In a large mixing bowl place all the meatball ingredients except the flour and mix until all incorporated.
- 2Divide mixture into 20 meatballs, or size you like. Roll and pat onto plate with flour. Set aside.
- 3Heat a med non-stick frypan with peanut oil and cook the meatballs 5 mins each side, depending on thickness patties.
- 4Serve meatballs on a platter with a little sweet chilli sauce.
