Thai Chicken Meatballs

These are great for parties or BBQ’s as a starter. The lovely flavours of Thailand really come through in these, which are very Moorish!

If you don’t like heat, omit the chilli or reduce down a little. We have used Thai red curry paste however you can also use Penang or Green Curry paste if you prefer.

Ingredients

  • 500g chicken mince
  • 2 spring onions, sliced finely
  • ½ tbsp. red chilli paste (optional)
  • 1 tbsp. Thai red curry paste
  • 2 tbsp. sweet chilli sauce
  • 1 tbsp. fish sauce
  • 2 tbsp. soy sauce, salt reduced
  • 2 clove garlic, crushed
  • 2 tsp. ginger, crushed
  • 2 slice multigrain bread, processed to make breadcrumbs
  • 3 tbsp. flour, plain

Method

  1. In a large mixing bowl place all the meatball ingredients except the flour and mix until all incorporated.
  2. Divide mixture into 20 meatballs, or size you like.  Roll and pat onto plate with flour.  Set aside.
  3. Heat a med non-stick frypan with peanut oil and cook the meatballs 5 mins each side, depending on thickness patties.
  4. Serve meatballs on a platter with a little sweet chilli sauce.
  5. Enjoy!
