Our version of the ploughman’s lunch is tasty, healthy and light. Make sure you use the best quality ingredients you can find. This is fun for picnics or people dropping by for lunch with some beer or wine.
Ingredients
- 2 slices ham, light
- 4 slices pastrami or roast beef
- 2 tbsp. chutney or relish, good quality
- 2 tbsp. tzatziki
- 2 boiled eggs
- 2 gherkins or pickled onions
- 4 cherry tomatoes
- 4 olives, pitted
- 1 slice Swiss cheese
- 25g vintage cheese
- 2 slices rye sour dough bread, good quality
- 2 wholemeal pita pockets
Method
- Layout all your ingredients onto a large wooden board or platter. Serve immediately.
