Bacon & Egg Slice

If you are vegetarian, omit the bacon and add some tofu if you like. This recipe is low sugar, low carb and high protein.

Bacon & Egg Slice

Ingredients

  • 4 eggs
  • 1 tbsp. olive oil
  • 1 cup sweet potato, grated
  • 1/4 cup low fat milk
  • 2 slices short cut bacon, diced
  • 1/4 onion, sliced
  • 50g (handful) fresh baby spinach
  • Sprinkle of mixed herbs
  • 1/2 garlic, crushed (optional)
  • Salt & pepper to taste

Method

  1. 1Preheat your oven grill.
  2. 2Heat a small frypan on medium heat, add olive oil and sauté onion for 5 minutes.  Add bacon and continue cooking until bacon has cooked.  Add sweet potato, and season with salt and pepper.  Cook for 5 minutes.
  3. 3Add spinach, sprinkle herbs, garlic and continue cooking until spinach has cooked down.
  4. 4Meanwhile beat eggs, milk and season to taste.  Add this to pan and turn down heat. Slowly cook egg, about 5 mins the place under grill to cook the other side.
  5. 5Once cooked, serve on a large plate or wooden board, slice into quarters and enjoy!
