Baked Blueberry French Toast

This is a great occasional breakfast or brunch. The edges are crunchy & the middle soft. Makes a great dessert too.

Baked Blueberry French Toast

Ingredients

  • 3 slices wholemeal bread
  • 3 tsp. cream cheese, light
  • 50g blueberries
  • 3 eggs
  • ¼ cup milk
  • 2 tbsp. maple syrup
  • Sprinkle cinnamon

Method

  1. 1Preheat oven 170C.
  2. 2Mix together the eggs, milk and a sprinkle of cinnamon in a mixing bowl. Cut your bread in half as a triangle. Dip each piece into the egg mixture so both sides are coated.
  3. 3Place into a small oven proof dish with pointy end poking up. Sprinkle an additional cinnamon over and any egg mixture left over drizzle over bread. Drizzle half the maple syrup over and scatter the blueberries. Place blobs of cream cheese over and bake for 10-15 minutes. Take out and drizzle remaining maple syrup.
