Caramelized Banana Pikelets
Serve this with some natural or vanilla flavoured yoghurt.

Ingredients
- 1 cup self raising flour.
- Pinch of bicarbonate soda.
- 1 egg.
- 1 tablespoon golden syrup.
- 3/4 cup reduced fat milk.
- 1 banana, sliced.
- 1/4 cup golden syrup, extra.
Method
- 1Sift flour and bicarbonate soda into bowl. Mix together egg, milk and golden syrup, stir well to combine. Add to flour mixture and whisk well until smooth.
- 2Heat non stick fry pan over low heat. Grease pan with cooking spray, Drop tablespoonfuls of mixture into fry pan and cook until bubbles rise to the surface. Flip and cook until golden brown. Set Aside.
- 3Heat small pan over low heat, add extra golden syrup and heat until melted. Add banana to syrup and cook until caramelized (brown in color).
- 4Serve spooned over pikelets.
