Ingredients

  • 2 wholegrain dinner rolls, halved
  • 4 eggs
  • 2 medium tomatoes, halved
  • 1/2 avocado, sliced
  • Freshly cracked black pepper

Method

  1. 1Preheat oven to 180 degrees.
  2. 2Place halved tomatoes on a baking tray, spray with cooking spray, season with salt and pepper and bake for 20 mins until softened.
  3. 3Meanwhile poach eggs to your liking.
  4. 4Toast your rolls.
  5. 5Slice avocado on top of rolls with tomato and egg.
  6. 6Season with cracked pepper.
