Healthy Big Breakfast
This healthy big breakfast recipe has loads of flavour as well as being a much healthier choice. Add some salt reduced baked beans for additional flavour and fibre, and you'll be feeling full for hours.

Ingredients
- 2 small potatoes
- ½ Chorizo Sausage, sliced
- 6 cherry tomatoes, halved
- 4 button mushrooms
- ½ red Capsicum, cut into chunks
- 2 eggs
- Sprinkle Rosemary
- Sprinkle Garlic Powder
- Pinch Smoked Paprika
- S & P Seasoning
- 1 tbsp. olive oil
Method
- 1Preheat oven 200C (400F) fan forced.
- 2Peel and cut potatoes into chunks. Place in a bowl and drizzle 1 tsp. olive oil over and mix with spoon so all potatoes are coated.
- 3Place on small non-stick baking tray and cook in oven for 10 mins.
- 4Put the mushrooms in the bowl and drizzle remaining olive oil.
- 5Take tray out of oven and arrange on the tray the chorizo, mushrooms and capsicum. Place back into oven and bake 10 mins.
- 6Now add the tomatoes, season entire ingredients on tray with a sprinkle with rosemary and smoked paprika, season with S&P. Turn down heat to 180.C (350F) and cook a further 10 mins.
- 7Meanwhile in a non-stick frypan (skillet) spray with a dash of cooking spray, crack 2 eggs and cook for 4 mins.
- 8Take tray out of oven; serve eggs on top of tray.
- 9Serve immediately with fresh OJ and coffee afterwards.
