Ingredients
- 2 cups rolled oat
- 1 tbsp. olive oil
- 2 tbsp. honey
- 1 tbsp. walnuts, finely chopped
- 1 tbsp. pecans, chopped
- 2 tbsp. dried cranberries
- 4 fresh figs, chopped
- 2 tbsp. pepita seeds/pumpkin seeds
- 4 cups reduced fat milk
Method
- 1Preheat oven to 180 degrees (160 degrees fan forced).
- 2Mix together rolled oats and walnuts in large bowl. Line a baking tray lined with baking paper (or if using foil, sprays with a little cooking spray so oats don’t stick to foil).
- 3Place olive oil and honey in a small dish and microwave for 10 seconds. Take out and mix.
- 4Pour over rolled oats and mix together until well combined.
- 5Evenly distribute over baking tray and place in oven. Cook for 5-6 minutes or until oats are golden brown in colour - keep your eye on it as it can burn.
- 6Let oats cool for a few minutes and then carefully place into large bowl.
- 7Mix in cranberries and figs with oats and mix until well combined.
- 8Place muesli in bowls and serve with milk.
- 9Serve immediately.
