Homemade Toasted Muesli

Ingredients

  • 2 cups rolled oat
  • 1 tbsp. olive oil
  • 2 tbsp. honey
  • 1 tbsp. walnuts, finely chopped
  • 1 tbsp. pecans, chopped
  • 2 tbsp. dried cranberries
  • 4 fresh figs, chopped
  • 2 tbsp. pepita seeds/pumpkin seeds
  • 4 cups reduced fat milk

Method

  1. 1Preheat oven to 180 degrees (160 degrees fan forced).
  2. 2Mix together rolled oats and walnuts in large bowl. Line a baking tray lined with baking paper (or if using foil, sprays with a little cooking spray so oats don’t stick to foil).
  3. 3Place olive oil and honey in a small dish and microwave for 10 seconds.  Take out and mix.
  4. 4Pour over rolled oats and mix together until well combined.
  5. 5Evenly distribute over baking tray and place in oven. Cook for 5-6 minutes or until oats are golden brown in colour - keep your eye on it as it can burn.
  6. 6Let oats cool for a few minutes and then carefully place into large bowl.
  7. 7Mix in cranberries and figs with oats and mix until well combined.
  8. 8Place muesli in bowls and serve with milk.
  9. 9Serve immediately.
