Salmon Brunch Tartlets
Make sure you use a multigrain bread, no white bread!This recipe is low sugar and low carb.

Ingredients
- 6 slices multigrain bread
- 2 eggs
- Chives
- 3 tbsp. low fat milk
- 60g canned salmon (or fresh smoked salmon)
- Cooking spray
- Salt and pepper to taste
Method
- 1Preheat oven 180C.
- 2Place your bread on cleaned bench. Cut off all crusts and roll thinly with rolling pin.
- 3Spray a large muffin tin with cooking spray. Place your bread into muffin tin, like a basket so it can hold the egg mix. At the base of each tartlet place the salmon.
- 4In a jug mix the egg, chives and milk, season with salt and pepper. Pour mixture into each basket and bake for 15-20 mins or until cooked.
