Salmon Brunch Tartlets

Make sure you use a multigrain bread, no white bread!This recipe is low sugar and low carb.

Salmon Brunch Tartlets

Ingredients

  • 6 slices multigrain bread
  • 2 eggs
  • Chives
  • 3 tbsp. low fat milk
  • 60g canned salmon (or fresh smoked salmon)
  • Cooking spray
  • Salt and pepper to taste

Method

  1. 1Preheat oven 180C.
  2. 2Place your bread on cleaned bench.  Cut off all crusts and roll thinly with rolling pin.
  3. 3Spray a large muffin tin with cooking spray. Place your bread into muffin tin, like a basket so it can hold the egg mix.  At the base of each tartlet place the salmon.
  4. 4In a jug mix the egg, chives and milk, season with salt and pepper.  Pour mixture into each basket and bake for 15-20 mins or until cooked.
