Savoury French Toast

Ingredients

  • 2 slices multigrain bread
  • 2 eggs
  • ¼ cup milk
  • 1 clove garlic, crushed
  • 4 mushrooms, sliced
  • 4 cherry tomatoes, halved
  • Sprinkle oregano
  • 1 tbsp. chives, chopped
  • ½ onion, diced
  • Handful spinach leaves
  • ¼ capsicum, diced

Method

  1. 1Heat olive oil in a non-stick fry pan and sauté onion and capsicum until cooked.
  2. 2Add mushrooms, garlic, season with salt and pepper and continue to cook a further few minutes.
  3. 3Add the cherry tomatoes and spinach sprinkle some oregano and cook a further few minutes then turn off heat.
  4. 4In a mixing bowl place eggs, milk, season with salt and pepper then whisk.
  5. 5Heat a non stick frypan which has been sprayed with cooking spray.
  6. 6Dip your bread into the egg mixture ensuring that both sides are coated.
  7. 7Place into pan and cook 1 minute each side, take out and place onto serving plates.
  8. 8Divide savoury topping onto French toast, garnish with chopped chives.
