Ingredients
- 2 slices multigrain bread
- 2 eggs
- ¼ cup milk
- 1 clove garlic, crushed
- 4 mushrooms, sliced
- 4 cherry tomatoes, halved
- Sprinkle oregano
- 1 tbsp. chives, chopped
- ½ onion, diced
- Handful spinach leaves
- ¼ capsicum, diced
Method
- 1Heat olive oil in a non-stick fry pan and sauté onion and capsicum until cooked.
- 2Add mushrooms, garlic, season with salt and pepper and continue to cook a further few minutes.
- 3Add the cherry tomatoes and spinach sprinkle some oregano and cook a further few minutes then turn off heat.
- 4In a mixing bowl place eggs, milk, season with salt and pepper then whisk.
- 5Heat a non stick frypan which has been sprayed with cooking spray.
- 6Dip your bread into the egg mixture ensuring that both sides are coated.
- 7Place into pan and cook 1 minute each side, take out and place onto serving plates.
- 8Divide savoury topping onto French toast, garnish with chopped chives.
