Scrambled Eggs with Salmon and Dill

Ingredients

  • 1 slice ciabatta bread
  • 1 egg & 1 egg white only
  • 1 tbsp. low fat milk
  • 1 tbsp. cottage cheese
  • 2 tsp. finely chopped dill
  • Freshly cracked black pepper (to taste)
  • 1 slice smoked salmon

Method

  1. 1Toast the slice of ciabatta and keep warm.
  2. 2Heat a non-stick frying over medium heat.
  3. 3Using a whisk briskly mix eggs, milk, cottage cheese, dill and black pepper together until a smooth mixture is formed.
  4. 4Spray frying pan with olive oil spray and add mixture to the pan.
  5. 5Using a whisk, stir egg mixture constantly over medium heat until it thickens and is a light creamy color, which should take about 2 minutes.
  6. 6Spoon scrambled egg on top of toasted ciabatta slice, roll smoked salmon and place on top of eggs and garnish with dill. Serve immediately.
