Scrambled Eggs with Salmon and Dill

Ingredients
- 1 slice ciabatta bread
- 1 egg & 1 egg white only
- 1 tbsp. low fat milk
- 1 tbsp. cottage cheese
- 2 tsp. finely chopped dill
- Freshly cracked black pepper (to taste)
- 1 slice smoked salmon
Method
- 1Toast the slice of ciabatta and keep warm.
- 2Heat a non-stick frying over medium heat.
- 3Using a whisk briskly mix eggs, milk, cottage cheese, dill and black pepper together until a smooth mixture is formed.
- 4Spray frying pan with olive oil spray and add mixture to the pan.
- 5Using a whisk, stir egg mixture constantly over medium heat until it thickens and is a light creamy color, which should take about 2 minutes.
- 6Spoon scrambled egg on top of toasted ciabatta slice, roll smoked salmon and place on top of eggs and garnish with dill. Serve immediately.
