Strawberry & Orange Pancakes
Adding fruit to our diet wherever we can is a great idea and these pancakes help do just that. They are very easy to prepare and look great with the strawberries in them. Enjoy with freshly squeezed

Ingredients
- 1 cup wholemeal self-raising flour
- Rind of 1 orange
- 1/3 cup low fat milk
- 1 egg
- 1/3 cup orange juice
- 1/2 cup halved strawberries
Method
- 1Heat large frying pan over medium - high heat and grease lightly with olive oil spray.
- 2Sift flour into basin, make a well in the centre. In a large jug mix together egg, low fat milk, rind and orange juice until combined.
- 3Mix in with the flour mixture and beat well to make a smooth batter.
- 4Drop 1/4 cup of the mixture onto pan, place strawberries on top and cook until bubbles rise to the surface.
- 5Turn the pancake over and cook the other side until light brown.
- 6Serve immediately on there own or with your favorite yogurt.
