Ingredients

  • 4 eggs
  • 1 cup low fat milk
  • 2 Slices thick ham, cut into chunks
  • 2 spring onions (Scallions), sliced
  • 1 small carrot, grated
  • ½  cup flour
  • 2 teaspoons seeded mustard
  • ½ cup sweet corn, canned, drained
  • Salt and Pepper to taste
  • Chutney, to garnish

Method

  1. 1Preheat oven to 180C degrees (160 degrees fan forced). Grease a flan or baking dish.
  2. 2Whisk eggs and milk together until well combined, season with salt and pepper.
  3. 3Add ham, spring onions, carrot, corn and stir well to combine.
  4. 4Pour flour into egg mix and mix in well.
  5. 5Pour into greased pan and cook in preheated oven for 30-40 minutes or until set.
  6. 6When cooled, take out and cut into triangles or rectangles.
  7. 7Place a spoonful of chutney onto slices and serve.
