Apple and Brown Sugar Pikelets

If you want to mix up the flavours or be adventurous from time to time, you can use other stewed fruits in place of apples. Tasty and healhty examples inlcude stewed apricots or plums.

Apple and Brown Sugar Pikelets

Ingredients

  • 2 granny smith apples, peeled, cored sliced
  • 1 tsp. brown sugar
  • Sprinkle of cinnamon
  • 2 tbsp. water
  • 3/4 cup self raising flour
  • 1 egg, beaten
  • ¼ cup low fat milk
  • 1 t tsp. cinnamon
  • 2 tbsp. maple syrup or honey
  • 1/2 tsp. cornflour mixed with 2 tbsp. cold water
  • Cooking Spray

Method

  1. 1Place apple in small sauce pan, pour 2 tablespoons water over the top with sprinkle of cinnamon and tsp. brown sugar. Cover and simmer for about 5 minutes.. Turn off heat, add the cornflour mixture and stir.
  2. 2Place flour in bowl and add beaten egg and milk and stir well to combine.
  3. 3Heat medium non stick pan over medium heat and grease with margarine. Place heaped tablespoon of mixture into pan and cook on one side until bubbles rise to the top, then flip and cook until golden brown.
  4. 4Place 2 piklets on each plate with a spoonful of apple mixture overtop, then drizzle a little maple syrup on top.
  5. 5Serve immediately, option to add low fat custard.
