Ingredients
- 3/4 cup dried apricots, finely chopped
- 1/2 cup slivered almonds, roughly chopped
- 1/2 cup condensed milk
- 1/2 cup plain or greek yoghurt
- 1 maderia cake 450g
- 2 tbsp. coconut
- 2 tbsp. orange juice
- 1 orange, grated rind
Method
- 1Place chopped dried apricots, almonds, milk, coconut, orange juice, and rind in a large bowl and mix well with a spoon.
- 2Crumble the maderia cake with ingredients and mix with your hands.
- 3Use teaspoons of mixture to make small balls.
- 4Place on a tray lined with baking paper, sprinkle a little coconut over and let sit in fridge for 1 hour.
- 5Place in a container, will keep in fridge for a couple of days.
