Apricot & Almond Balls

Ingredients

  • 3/4 cup dried apricots, finely chopped
  • 1/2 cup slivered almonds, roughly chopped
  • 1/2 cup condensed milk
  • 1/2 cup plain or greek yoghurt
  • 1 maderia cake 450g
  • 2 tbsp. coconut
  • 2 tbsp. orange juice
  • 1 orange, grated rind

Method

  1. 1Place chopped dried apricots, almonds, milk, coconut, orange juice, and rind in a large bowl and mix well with a spoon.
  2. 2Crumble the maderia cake with ingredients and mix with your hands.
  3. 3Use teaspoons of mixture to make small balls.
  4. 4Place on a tray lined with baking paper, sprinkle a little coconut over and let sit in fridge for 1 hour.
  5. 5Place in a container, will keep in fridge for a couple of days.
