Banana Almond & Cinnamon Muffins

Ingredients

  • 1 cup wholemeal self raising flour
  • 3 tbsp. reduced fat margarine, melted (or butter)
  • 1/2 cup low fat milk
  • 2 tbsp. Greek Yoghurt
  • 1 egg
  • 3 tbsp. honey (or maple syrup / golden syrup)
  • 1.5 large ripe banana, mashed
  • 2 tbsp. flaked almonds
  • 2 tbsp. almond meal
  • 1/4 teaspoon cinnamon

Method

  1. 1Preheat oven to 180, (160 fan forced).
  2. 2Sift flour into bowl then add cinnamon and almond meal. Make a well in the centre.
  3. 3Add egg, milk, yoghurt, honey, yoghurt and mix together.
  4. 4Once all incorporated add mashed banana and stir.
  5. 5Carefully fold through flaked almonds.
  6. 6Divide mixture into muffin patties and cook for 20 mins. (option to scatter a couple almonds on top).
  7. 7Take out and cool on wire rack.
