Ingredients

  • 1/2 onion, sliced
  • 2 short cut bacon, diced
  • 1 clove garlic, crushed
  • 1/2 cup corn
  • 2 tbsp. capsicum strips
  • 1 tbsp. chives
  • 3 eggs
  • 1 egg white
  • 3 tbsp. low fat milk
  • 1/4 cup ricotta, reduced fat

Method

  1. 1Preheat oven to 180°C.
  2. 2Heat a non stick fry pan, sprayed with a little cooking spray. Cook bacon until brown, set aside. Spray pan again and cook onion for 5 mins. Add water and simmer until liquid has nearly evaporated. Add sugar and cook a further few minutes. Set aside.
  3. 3Whisk the eggs, egg white, milk, garlic, and ricotta until all incorporated, season with S & P.
  4. 4Spray 2 small baking dishes with cooking spray. On the base place the onion then bacon. Pour half the mixture into each dish. Add the tomatoes, capsicum and garnish with a little chopped chives.
  5. 5Cook in oven for approx 30 mins, time will depend on oven.
  6. 6Serve with a little side salad.
