Ingredients
- 30g self raising flour (approx ¼ Cup)
- 125g corn kernels
- 1 x 59g egg
- 40g tomato, finely chopped
- 10g coriander, finely chopped
- 5g minced garlic
- 30g tomato relish, to serve
- 10g olive oil
Method
- 1Place self raising flour and egg in bowl, mix until well combined.
- 2Drain corn kernels and add tomato, coriander and garlic and mix until well combined.
- 3Preheat small non stick frying pan and add olive oil.
- 4Spoon tablespoons of mixture into pan and cook until bubbles rise to the surface.
- 5Flip over and cook other side until golden brown.
- 6Serve immediately drizzled with tomato relish.
