Ingredients

  • 1kg washed Pontiac potatoes, quartered
  • 1/4 cup wholegrain mustard
  • 1/3 cup reduced fat mayonnaise
  • 1/2 cup finely chopped sun dried tomatoes
  • 1 small green capsicum, finely chopped
  • 1 cup corn kernels

Method

  1. 1Cook potatoes in large saucepan of water until tender (approx 12-15 minutes).
  2. 2Drain potatoes and cool.
  3. 3Mix together whole grain mustard and mayonnaise and add to potatoes, add sun dried tomatoes, corn kernels and capsicum and mix through potatoes until combined.
