Ingredients
- 1kg washed Pontiac potatoes, quartered
- 1/4 cup wholegrain mustard
- 1/3 cup reduced fat mayonnaise
- 1/2 cup finely chopped sun dried tomatoes
- 1 small green capsicum, finely chopped
- 1 cup corn kernels
Method
- 1Cook potatoes in large saucepan of water until tender (approx 12-15 minutes).
- 2Drain potatoes and cool.
- 3Mix together whole grain mustard and mayonnaise and add to potatoes, add sun dried tomatoes, corn kernels and capsicum and mix through potatoes until combined.
