Healthy Nachos for One

Ingredients

  • 2 mushrooms, chopped
  • 1 cup 4 bean mix, drained and rinsed
  • 8 cherry tomatoes, halved
  • 2 slices low fat bacon, fat removed
  • ¼ onion, diced
  • 1 clove garlic, crushed
  • ½ cup water
  • 2 tsp. fajita seasoning mix
  • ¼ cup frozen corn
  • 10 corn chips
  • 1 tbsp. Greek Yoghurt
  • 2 tbsp. salsa

Method

  1. 1Heat a non-stick fry pan with olive oil and sauté the bacon, onion and mushrooms until cooked. Add the bean mix, garlic, ¼ cup water, fajita seasoning mix and simmer for 5 minutes.
  2. 2Add tomatoes, and if needed the remaining water. Simmer a further couple of minutes.
  3. 3Place onto a plate with your corn chips, dollop some Greek yoghurt and salsa and enjoy!
