Healthy Nachos for One
These nachos are so tasty you won’t believe they are healthy.

Ingredients
- 2 mushrooms, chopped
- 1 cup 4 bean mix, drained and rinsed
- 8 cherry tomatoes, halved
- 2 slices low fat bacon, fat removed
- ¼ onion, diced
- 1 clove garlic, crushed
- ½ cup water
- 2 tsp. fajita seasoning mix
- ¼ cup frozen corn
- 10 corn chips
- 1 tbsp. Greek Yoghurt
- 2 tbsp. salsa
Method
- 1Heat a non-stick fry pan with olive oil and sauté the bacon, onion and mushrooms until cooked. Add the bean mix, garlic, ¼ cup water, fajita seasoning mix and simmer for 5 minutes.
- 2Add tomatoes, and if needed the remaining water. Simmer a further couple of minutes.
- 3Place onto a plate with your corn chips, dollop some Greek yoghurt and salsa and enjoy!
