Prawn Skewers Cucumber Salsa

Ingredients
- 200g raw prawns
- 1 clove garlic, crushed
- 1 tbsp. coriander, finely chopped
- 1 tbsp. sweet chilli sauce
- 1 tbsp. olive oil
- 1/2 cucumber, diced
- 1 tomato, diced
- 1/4 red onion, diced
Method
- 1Mix garlic, coriander and sweet chilli sauce in bowl.
- 2Thread prawns on skewers, brush with marinade. Place in fridge.
- 3In small bowl mix together cucumber, tomato and red onion , mix until combined.
- 4Preheat pan over medium heat, add oil, cook prawns 1-2 minutes each side or until cooked through.
- 5Serve immediately on top of salsa.
