Prawn Skewers Cucumber Salsa

Ingredients

  • 200g raw prawns
  • 1 clove garlic, crushed
  • 1 tbsp. coriander, finely chopped
  • 1 tbsp. sweet chilli sauce
  • 1 tbsp. olive oil
  • 1/2 cucumber, diced
  • 1 tomato, diced
  • 1/4 red onion, diced

Method

  1. 1Mix garlic, coriander and sweet chilli sauce in bowl.
  2. 2Thread prawns on skewers, brush with marinade. Place in fridge.
  3. 3In small bowl mix together cucumber, tomato and red onion , mix until combined.
  4. 4Preheat pan over medium heat, add oil, cook prawns 1-2 minutes each side or until cooked through.
  5. 5Serve immediately on top of salsa.
