Prawn Wontons
These prawn wontons make a wonderful entertaining fingerfood, or Chinese family banquet dish.

Ingredients
- 200g freshly cooked prawns, chopped
- 3 tbsp. soy sauce
- 1 tsp. ginger, grated
- 1 clove garlic, crushed
- Pinch chilli or chilli paste
- 1 tbsp. chives, chopped
- 1 tbsp. mirin or rice wine vinegar
- 14 fresh wonton wrappers
Method
- 1Place prawns, 1 tbsp. soy sauce, ginger, garlic, chilli and chives into a mixing bowl. Mix until all combined.
- 2Prepare your bamboo basket on top of a pot of boiling water or you can use a steamer. To stop the wontons sticking to the steamer or basket place a sheet of baking paper slitting some whole for the steam to get through.
- 3Layout wonton wrappers on your clean bench. Place a small spoonful of mixture onto the centre of your wonton. Using a pastry brush or your finger place onto the edge some water to help seal the wonton. Now pick up the wrapper and form into a parcel squeezing the edges tightly.
- 4Place into your steamer and steam for 3-4 minutes. Serve with dipping sauce soy sauce and mirin in a small dipping bowl.
